what makes galega olives special

Galega is one of Portugal’s oldest and most emblematic olive varieties and the backbone of many Alentejo oils. Its character can be described as mild, balanced and slightly fruity, which makes it ideal for everyday cooking and for finishing delicate dishes. Grown across centuries in central and southern Portugal, Galega became the classic Alentejo olive because of its adaptability and the elegant oils it produces when tended carefully.

The warm summers, cool winters and diverse soils of Alentejo produce olives with concentrated flavour and natural complexity. These conditions help Galega develop its signature apple, grass and nutty notes.
